Recipe: Cranberry Turkey Wraps

With school back in session, it’s so easy to get tired of eating the same old lunch from home everyday! Here’s a recipe I found that is sure to throw a little excitement and variety into your (or your child’s) lunchbag!

Serves 8

Ingredients:

1 medium tart apple, peeled and diced
3 tablespoons dried cranberries
1 (6 ounce) carton plain fat-free yogurt
2 tablespoons fat-free mayonaise
8 flour tortillas
8 lettuce leaves
1 ½ lbs deli turkey (sliced thin)
8 ounces part-skim mozzarella cheese, sliced
2 tablespoons pecans, toasted and chopped

Directions:

1. In a small bowl, combine the apples and cranberries
2. In another bowl, combine yogurt and mayonaise; spread over tortillas
3. Layer each tortilla with lettuce, turkey, cheese, fruit mixture and pecans.
4. Roll up tightly.
