Healthy Food Review: Laughing Cow Cheese Wedges

Being a true “Wisconsinite,” I’ve always loved cheese. However, it’s the calories and fat it contains that I’m less fond of.  About a year ago I was at my aunt’s house having lunch when she introduced me to Laughing Cow cheese wedges.  If you haven’t tried them yet, I highly recommend it!  They come in a variety of different flavors like Swiss, French Onion, Garlic and Herb, Queso Fresco and Chipotle, and a few others.

The Light Swiss is the only one I’ve tried so far and based on how creamy and flavorful it was I can’t wait to try the other flavors!  Not only is this cheese delicious, but each wedge of the Light varieties has only 35 calories. Over the past few months I have been experimenting in the kitchen and have incorporated it into some of my recipes. Here are just a few of my favorites:

  • Sandwiches/Wraps: Substitute a cheese wedge for mayo on a wrap or sandwich for fewer calories and more flavor.

  • Omelets: Eggs, spinach, mushrooms, and a wedge of Light Swiss and you’ve got yourself a quick, healthy breakfast (or dinner!).

  • Baked potatoes: I used to cover my spud in butter and sour cream but ever since I tried this cheese on my potato I haven’t gone back.

  • Whole wheat pasta: After cooking and draining the noodles I add in a wedge or two along with some broccoli and I’ve got myself some delicious mac and cheese! If you’re looking to make an Alfredo sauce for your pasta, check out this recipe.

  • Crackers: I’ve used all kinds of crackers in the past and they all go well with this cheese. Recently a friend told me if you spread it on graham crackers and top it with strawberries it tastes like cheesecake. Yum…I’m trying this next!

  • Fruit: Spread some apple slices with the cheese for a quick, easy, low calorie snack at work.
