Valentine's Day Dinner Recipe

I’m sure you’ve noticed all the pink and red decorations at the store- Valentine’s Day is almost here!  I am one of those people that would be more than happy to receive a box of assorted chocolates (but only end up eating the caramel-filled ones), however, in an attempt to watch my waistline I’ve come up with a different plan for this holiday. My husband and I will stay in and make dinner; here is what’s on the menu.

Maple Salmon

Ingredients

  • 1 lb. salmon
  • ¼ cup maple syrup
  • 1 clove garlic, minced
  • ¼ teaspoon garlic salt
  • 1/8 teaspoon ground black pepper

Directions

  • In a small bowl, mix the syrup, soy sauce, garlic, garlic salt and pepper.
  • Put salmon in a shallow glass baking dish and coat with syrup mixture. Cover and marinate in the fridge for 30 minutes, turning once.
  • Preheat oven to 400 degrees F
  • Place baking dish in preheated oven and bake uncovered for 20 minutes.

This is the first dish my husband cooked for me when we were newly dating and it’s still one of my favorites. While he makes that I’ll make some roasted broccoli by just adding a little olive oil, garlic, salt and pepper to the florets and baking them for about 25 minutes in the oven, which will already be at 400 degrees. When I take out the broccoli I squeeze lime juice on it- believe me, it just works, tastes so good you may start craving broccoli! And for a healthier dessert? My favorite treat in the world:

Chocolate covered strawberries

I enjoy white baking chocolate too so I may dip the berries in both dark and white chocolate.  Enjoy your meal, enjoy your Valentine’s Day and if you hate this day (I know there are some Valentine haters out there!), at least rejoice in the fact that we are one holiday closer to summer weather and soon we can stick the salmon on the grill.
