Sweet Potato Breakfast Hash

I love a nice big breakfast, but find it hard to motivate myself to make something every morning.  I usually just end up grabbing something quick like a yogurt or a banana.  These are not bad choices necessarily, but they don’t keep me full long enough, and an hour later, I find myself searching for something else.  That is until this sweet potato breakfast hash entered my life.  I prepare a large batch on Sunday, and then just take some each day for work!

Ingredients

(Makes enough for 5 days worth of breakfasts)

  • 4 large sweet potatoes-peeled and sliced
  • 1 Tbsp olive oil
  • 4 med-large zucchini- sliced
  • 1 sweet onion-diced
  • 10 egg whites

Directions

Peel and slice sweet potatoes.  Microwave them for 2 minutes. In a large frying pan, heat ½ Tbsp olive oil.  Add sweet potatoes and stir until they are soft.  In a separate frying pan, heat the other ½ Tbsp olive oil, add zucchini and onion. Stir until soft and cooked through.  Cool both pans, and then transfer to separate storage containers. 

In the morning, add 2 egg whites to a pan with non stick spray and ½-1 cup of zucchini and onion mixture, and ½ cup of sweet potato mixture. Cook until egg whites are cooked and entire mixture is heated-about 5 minutes.

Season to taste with any seasoning you like.  Ideas include; onion salt, garlic salt, garlic powder, everything bagel seasoning, any Mrs. Dash seasoning.
