Red, White and Green Salad

If you have to make a side dish for an upcoming holiday party I have a salad to recommend. And yes, I said salad- don’t worry though, even typical salad haters will enjoy this salad. Well, maybe enjoy isn’t the right word but they will tolerate it. And besides the fact that it tastes great, it looks beautiful and with the red pomegranate seeds, the green lettuce and the white feta- it’s practically a decoration when plated!

Mixed Green Salad with Pomegranate Seeds, Feta and Pecans

Ingredients:

  • 6 cups mixed salad greens (I like spinach and arugula)
  • ½ cup pomegranate seeds
  • ½ cup feta cheese
  • ½ cup pecan halves (I have also used slivered almonds)
  • 1 cup balsamic vinaigrette

Directions:

Add all ingredients except vinaigrette into a bowl, add dressing shortly before serving.

If you don’t want to attempt extracting the arils from the pomegranate, you can buy them in the store on their own but you’ll pay a little more. For those of you with more patience (not me), click here to see how to get the seeds out on your own.
