One Pan Healthy Sausage and Veggies

There gets to be some busy times of the year when it is truly all about the quick and easy for meals. I think right now is that time of year for a lot of people. One tool to have in your toolkit is a sheet pan, and maybe some parchment paper. With that your possibilities of quick, easy, and healthy meals become almost limitless. I’m talking Sheet Pan meals here, people! This is a great solution for days when you don’t have a ton of time. This One Pan Healthy Sausage and Veggies recipe is one of my favorites.

Ingredients:

  • 2 cups Red Potato
  • ¾ pound Green Beans
  • 1 Large head of Broccoli
  • 1 and ½ cups chopped bell peppers
  • 9 oz smoked Turkey or Chicken sausage
  • 6 Tbs Olive Oil
  • ¼ tsp Red Pepper Flakes (optional)
  • 1 tsp paprika
  • ½ tsp garlic powder
  • 1 Tbs dried Oregano
  • 1 Tbs dried Parsley
  • ¼ tsp Salt
  • ¼ tsp Pepper

Serve with: Fresh Parsley, Quinoa/Rice, freshly grated Parmesan Cheese

Instructions:

  1. Preheat the oven to 400 degrees F.
  2. Line a large sheet pan with foil or parchment paper.
  3. Prep the veggies: chop the red potatoes (cut these small so they will get tender), trim the green beans and halve, chop the broccoli, chop the peppers into thick squares, and coin the sausage in thick slices.
  4. Place all of the veggies ad sausage on a sheet pat. Pour the olive oil and all the spices on top. Toss to evenly coat all the veggies and meat.
  5. Bake 15 minutes, remove from the oven and flip/stir the veggies. Return to the oven and bake for another 10-15 minutes or until the vegetables are crisp/tender and the sausage is browned.

P.S. This one is great for meal prepping too! I like to make this ahead of time for my lunches during the week.
