Healthy Baked Chicken Nuggets

When I got married, the most unique gift I received was a homemade cookbook put together by a bunch of ladies from a local church (a church of which I have never attended). I have to be honest, it took me a while to really take a look at it, it didn’t really seem like it would be up my ally. As I eventually started looking through it, not only does it give me every kind of hearty recipe a good Midwesterner would need to make, but it also has recipes for a happy life and successful relationship.

The gift instantly went from unique to uniquely awesome! Now, I had to kind of weed through all of the ingredients in the dishes such as lard, incredible amounts of butter, sugar, and yes even fried squirrel; but I did happen to find this gem that is an easy weeknight or meal preppable dish. It’s also toddler approved, packer party approved, and family gathering approved. Here is a recipe for Healthy Baked Chicken Nuggets:

Ingredients

  • 2 Large boneless (skinless) chicken breasts, cut into bite sized pieces.
  • ½ teaspoon salt and black pepper, to taste
  • 2 teaspoons olive oil
  • 6 Tablespoons Italian Seasoned Breadcrumbs (whole wheat)
  • 2 Tablespoons panko
  • 2 Tablespoons grated Parmesan Cheese
  • Olive oil spray

Directions

1.       Preheat oven to 425 degrees Fahrenheit. Spray a baking sheet with olive oil spray.

2.       Put the olive oil in one bowl and the breadcrumbs, panko and parmesan cheese in another.

3.       Season chicken with salt and pepper, then put in the bowl with the olive oil and mix well so the olive oil evenly coats all of the chicken.

4.       Put a few chunks of chicken at a time into the breadcrumb mixture to coat, then on the baking sheet.

5.       Lightly spray the top with olive oil spray then bake 8-10 minutes. Turn over then cook another 4-5 minutes or until cooked through.
