Fire Roasted Salsa

Feel like being a diva in the kitchen? Try this easy homemade salsa and impress even your worst enemy.

 

Directions

  • 1 pound tomatoes chopped, about 2 cups, fire-roasted tomatoes

  • 1 cup chopped white onion (about half an onion)

  • 1/3 cup chopped green onions

  • 1/3 cup chopped cilantro

  • 3 serrano peppers, chopped

  • 8 cloves roasted garlic (it will keep in the fridge for about 2 weeks, remember this for the lazy version)

  • ¼ teaspoon ground cumin

  • Juice of half a lime

  • Salt to taste

 

Throw it all in a blender and blend to the consistency of your liking.

 

 

 

In a rush or feeling lazy, here’s an even simpler version:

 

 Directions

  • 1 can (14.5 oz) fire roasted diced tomatoes

  • 1 cup chopped white onion (about half an onion)

  • 1/3 cup chopped green onions

  • 1/3 cup chopped cilantro

  • 1/3 cup sliced jalapenos from a jar

  • 2-3 cloves raw garlic (or use the roasted garlic you’ve been keeping in the fridge for this very purpose)

  • ¼ teaspoon ground cumin

  • 1 tablespoon ReaLime juice

  • Salt to taste

 

Same directions as above - throw it all in a blender and blend to the consistency of your liking.

 

What are the calories, you ask? For the entire recipe it’s about 240.  If you divide that between you and three friends, it’s about 60 calories each.  This is great to eat as a dip or on tacos/burritos.
