Fall Recipe Round Up

by Megan

When you  hear fall your probably think of pumpkin (or Halloween candy…), and while pumpkin is certainly the best known vegetable of the season, there are plenty of other produce items ripe for the picking, or buying! Want ideas? Think:

  • Acorn squash
  • Broccoli
  • Cauliflower
  • Kohlrabi
  • Mushrooms
  • Swiss Chard
  • Turnips

Before you roll your eyes and say, “Megan, unless you can make kohlrabi taste like pumpkin pie, I don’t really care!”, I guess I will say, no, I can’t make it taste like pumpkin pie but I do have some recipes that will make it taste delicious!

Apple Stuffed Acorn Squash- It’s also apple season, why not pair it with squash?!

Roasted Broccoli and Cauliflower- Vegetables roasted with garlic and parmesan? Sign me up.

Crispy Apple and Kohlrabi Salad

Baked Parmesan Mushrooms- Ugh, sautéed mushrooms are so last season.😊

One-Pot Sweet Potato and Chard Salad- Perfect, as it’s also the season for sweet potatoes

Roasted Turnips with Balsamic Vinegar and Thyme- I don’t think I’ve ever craved turnips until this recipe. Enjoy.

Hopefully this recipe round-up will get your creative juices cooking in the kitchen- let me know if you have any recipes you always use this time of year. I know I’ll be cooking a big pot of chili soon, it just tastes better when the weather gets cooler and football is on in the background.
