Easy Quiche

My latest obsession for breakfast and lunch is quiche. I make it ahead of time on Sunday afternoon and I have it for the next few days. I make different variations, and I can throw in whatever vegetables I have around. Same with cheese- I just use whatever I have on hand. And it’s so easy! However, I have experimented with several quiche recipes and one told me 3 eggs plus 1 cup of milk, a different recipe told me 5 eggs and ¾ cup milk, one told me 4 eggs and on and on. Then I stumbled across an awesome blog and she simplified a quiche recipe into this formula:

  • 1 pie crust (I buy mine)
  • 6 eggs
  • 3 Tbsp. cream (I use skim milk)
  • 1 cup cheese
  • 2-3 cups veggies
  • Mix and bake at 350 degrees for 50-60 minutes

Seriously, it's so easy. I made two last Sunday, one with spinach, mushrooms and feta cheese. The second one with cheddar cheese and some ham, mostly for my husband and son to eat. You can experiment with any number of vegetables, you could throw in a spicy cheese- or no cheese, completely up to you. Happy meal prepping!
