Recipe: Apple-Bacon Brussels Sprouts

So, who is trying to eat more vegetables as part of their New Year’s Resolution? Great! Now, who is meeting some resistance with that resolution on the home front? More than a few of you? Well I may have a recipe that mixes your goal with your less-than-enthusiastic spouses’ (just a guess?) goal of eating something that “doesn’t taste healthy” (does anyone else hear that in their home?).  Alright, so get some Brussels sprouts, an apple, unsweetened apple juice and some bacon! Yes, you are reading that correctly- we have a recipe with Brussels sprouts and the most amazing strips of deliciousness together for a mouth-watering side dish.

Apple-Bacon Brussels Sprouts (from sparkpeople.com)

Ingredients

  • 1 Lb. of Brussels sprouts, washed and quartered
  • 3 slices center cut bacon, fat trimmed
  • 1 tart, crisp apple, cored and cut into chunks
  • ¼ cup unsweetened apple juice
  • 2 Tbsp. diced red onion
  • Salt and Pepper to taste

Directions:

Heat a large skillet over medium heat and add bacon strips. Cook, turning once, until browned. Remove the bacon and slice into 1 inch pieces. Reserve 1 tablespoon of the bacon drippings and discard the rest. Add Brussels sprouts and apples. Pour in the apple juice. Cook over medium heat, stirring occasionally, about 10 minutes or until sprouts turn bright green and tender. Add bacon back to the skillet and cook for two more minutes. Season to taste with salt and pepper. Serve immediately.

Makes about 6 servings.

Per serving: 189 calories, 2.2 g fat, 3.3 mg cholesterol, 37.2 g carbohydrates, 14.5 g fiber, 13.7 g protein, 146 mg sodium.

Try it and see what you think. It’s a twist to Brussels sprouts that may be an easier sell to someone who is apprehensive about veggies.
