Nearly a year ago, I posted about financial wellness and my families plan for becoming more financially secure. Today, I wanted to share a quick update on our progress and talk more about the importance of budgeting! My post last year was all about the Dave Ramsey Baby Steps. I am happy to report that not only are we sticking to our goals and working on the Baby Steps, but we are killing it. A lot of life has happened in the last ten months that could have completely derailed our plans financially, but we stuck to our goals and trusted the process, and wouldn’t you know it, by sticking to our plan, we are actually ahead of schedule on reaching our goals! more...

I personally do not make resolutions, but when early January rolls around, I press the reset button and evaluate things I have been doing well and areas where I need to make some improvements. One of the areas where I could certainly make some changes is my vegetable intake. Enter Butternut Squash Soup! The other night, I was feeling uninspired as to what to make for dinner. I looked in my freezer, my fridge, and my pantry and grabbed a few things from each to make a random recipe. I was impressed with what I came up with since I started from scratch! I am calling this an Easy Veggie Skillet. I made it with whatever vegetables I had in my fridge, some ground turkey, and marinara sauce! It was delicious and will make an appearance on our dinner table again.
