My son and I were at the grocery store a couple weeks ago. Now, when you shop with a 3 year old it either goes very smoothly or it’s a train wreck. I could anticipate the “train” getting a little unsteady and we hadn’t even made it through the produce section, which is the first thing we go through at our store. Ok, so pancakes are kind of a big deal in our house. What’s great is pancakes can come in a lot of different forms. This recipe is one of my seasonal favorites. They are also great for prepping ahead of time to have for the first couple days of the week. With the greek yogurt added into the recipe, it makes these fluffy cakes of joy a good source of protein. You can feel it, fall is in the air. It’s hard not to fall in love with all of the beautiful colors of nature that happen this time of year. We have also started to have some cooler temperatures which makes hanging out in the outdoors a little more inviting for some people. There are a handful of places in our area that allow us to take in the beautiful scenery and also allow us to reap the benefits of being active in the outdoors and taking in that crisp fall air. more...

I am notorious for getting into the same routine with food - I think some of you can relate! I typically wouldn’t bat an eye if I ate the same thing for lunch for a month. However, for whatever reason I needed a change. I started experimenting in my kitchen. Let’s be real, not every new thing I try has the greatest outcome. There was something good that came from this round of experimentation though! Plus, it’s easy, just the way I like it! Basically, you throw a whole bunch of veggies onto a sheet pan, toss some seasoning over the top of it, bake it in the oven for about 30 minutes, and there you have it.
