Ok, so pancakes are kind of a big deal in our house. What’s great is pancakes can come in a lot of different forms. This recipe is one of my seasonal favorites. They are also great for prepping ahead of time to have for the first couple days of the week. With the greek yogurt added into the recipe, it makes these fluffy cakes of joy a good source of protein. I have a confession to make. I’ve only had meatloaf twice in my life. I think my mom had it too much when she was a kid and we never made it when I was growing up. Recently I was making the below meatball recipe and I had an epiphany: meatloaf was called such because it was meat in the shape of a loaf, and meatballs were called such because they were meat in a ball shape. You can feel it, fall is in the air. It’s hard not to fall in love with all of the beautiful colors of nature that happen this time of year. We have also started to have some cooler temperatures which makes hanging out in the outdoors a little more inviting for some people. There are a handful of places in our area that allow us to take in the beautiful scenery and also allow us to reap the benefits of being active in the outdoors and taking in that crisp fall air. more...

Thinking back to a few previous Coaches’ Corner blogs such as Coach Joanna’s “Best Exercise for Weight Loss” and one of my recent blogs “A New Water Sport”, I started thinking about how important it is that exercise is fun and engaging. A few things that I hear most often is that exercise is boring, too difficult, too time consuming, etc. The list goes on and on! I hear from a lot of people that making time for a healthy breakfast is a real challenge. I know the challenge myself! There is a lot to get done in the morning! Once showers are taken, beds made, a load of laundry thrown into the dryer and the dog taken for a quick stroll around the block, there just isn’t much time left before you need to be at work! more...
