Ok, so pancakes are kind of a big deal in our house. What’s great is pancakes can come in a lot of different forms. This recipe is one of my seasonal favorites. They are also great for prepping ahead of time to have for the first couple days of the week. With the greek yogurt added into the recipe, it makes these fluffy cakes of joy a good source of protein. My latest obsession for breakfast and lunch is quiche. I make it ahead of time on Sunday afternoon and I have it for the next few days. I make different variations, and I can throw in whatever vegetables I have around. Same with cheese- I just use whatever I have on hand. And it’s so easy! more...

I hear from a lot of people that making time for a healthy breakfast is a real challenge. I know the challenge myself! There is a lot to get done in the morning! Once showers are taken, beds made, a load of laundry thrown into the dryer and the dog taken for a quick stroll around the block, there just isn’t much time left before you need to be at work! more...

I caught myself getting into an argument the other day with my 3-year-old about why he can’t eat animal crackers for breakfast. Side note, I don’t recommend getting into arguments with small children, it never works in your favor, ever. Back to the main point; breakfast is a big deal! It’s important to start your day with the best nutrients possible. My friend gave me this recipe and I knew I had to share it with you the moment I tried it. This recipe is loaded with all of the good stuff to get your day started off right.
