I can’t wait to try out this recipe next weekend, when some friends and family get together to celebrate the 4th of July. When I was asked to bring a dessert, I started scouring the internet for ideas.  One of my family’s favorite summertime treats is fruit pie, so I was really excited to find this recipe.

While I commend the fruit portion of the pie equation, pies tend to be high in sugar and fat. This recipe is designed to give you the taste of peach pie without all the fat. I can’t wait to see what my friends and family think of this latest concoction.  Let me know what you think, too!


Yields: 2 servings

Ingredients:
1 (16 ounce) can sliced peaches in juice (drained)
(You can also use 2-3 large sliced, fresh peaches in place of canned peaches)
2 tablespoons light brown sugar
1/2 teaspoon cinnamon
1-2 drop vanilla
1 dash nutmeg
1 tablespoon orange juice
2-3 whole graham crackers (crumbled)

Instructions:
1. Mix everything except graham crackers. 
2. Chill for one hour.
3. Top with graham crackers before serving.
