I’ve been known to watch Food Network on occasion. I’m not an amazing chef by any stretch of the imagination, but I try to pick up a new food preparation trick occasionally while watching my favorite shows. One term I hear often on that channel is “comfort food”. So what exactly is comfort food?

The truth is that comfort food can almost anything!  For most people, comfort foods are those familiar, simple foods that they grew up with. Usually, there’s a strong emotional connection to the dish, as well. Unfortunately, that usually means that they aren’t exactly low in fat.

For me, meatloaf is one of my comfort foods.  My mom would always make meatloaf during the winter on a cold, snowy day.  There was nothing better to come home to after a long, hard day of sledding!

I wanted to try and recreate a healthier version of meatloaf, and in the process, stumbled upon this great recipe! Give it a try and let me know if it lives up to your favorite meatloaf recipe.

Yields: 7

Ingredients:
1 pound ground turkey
¾ cup seasoned bread crumbs
1 egg
½ cup barbeque sauce
1 medium onion

Instructions:
1. Preheat over to 350 degrees.
2. In a medium bowl, combine ground turkey, breadcrumbs, egg, onion and barbeque sauce.
3. Mix well with hands.
4. Spray the inside of a loaf pan with non-stick spray.
5. Put mixture in loaf pan and mold it to form a loaf. Then spread a light coating of barbeque sauce over the top of the meatloaf.
6. Bake for 45 minutes, then serve.
