With all of the cold weather we have been dealing with in western Wisconsin lately, I’ve been really looking for some great healthy meals to help warm me up. This slow cooker salsa chicken recipe really hit the spot!

What I loved about this recipe is that I can toss everything in my slow cooker before I leave for work in the morning. Then when I get home I am greeted with the wonderful aroma of a meal just waiting for me!

Serves: 6

Ingredients:
4 boneless, skinless chicken breasts
1 cup salsa
1 package reduced sodium taco seasoning
1 can reduced fat cream of mushroom soup
½ cup reduced fat sour cream

Instructions:
1. Add chicken to slow cooker
2. Sprinkle taco seasoning over chicken
3. Pour salsa and soup over chicken
4. Cook on low for 6 – 8 hours
5. Remove from heat and stir in sour cream
6. Serve with rice

Notes:
You may use half the packet of taco seasoning

Some slow cookers cook faster than others. The newer ones cook a bit faster and you may have to adjust your cooking time based on that.
