I eat a lot of broccoli, usually steamed or raw with a little low calorie dressing.  Sometimes the same old thing can get a little boring.  My coworker came in the other day raving about this new broccoli recipe she came up with.  I tried it, and I have to say, I may never eat broccoli any other way!  It was so good I wanted to share it with you:

Ingredients:
Frozen or fresh broccoli (as much as you want)
Olive oil
Fresh cracked pepper
Chopped walnuts or pecans

Instructions:
Put the broccoli in a bowl and drizzle a little olive oil over it.  Add some fresh cracked pepper and sprinkle with chopped walnuts or pecans.  Toss the ingredients in the bowl.  Spread the mixture on a cookie sheet and bake 20-25 minutes at 400 degrees (about 10-15 minutes for fresh broccoli.)  It is done when the broccoli can be easily pierced with a fork and is slightly browned on the tips.

Let me know what you think.  Do you have any ideas for making veggies more fun?
