I’ve mentioned once or twice before how fond I am of breakfast.  This isn’t just because it tastes great, either!  Breakfast really is the best way to start your day.  Providing yourself with a healthy meal in the morning helps get your mind on track and starts your diet right! 

Oatmeal is a great breakfast choice. It provides you a low-fat, high-fiber meal that tastes great.  Additionally, it’s pretty quick to make!  Try this recipe below for a fun twist on everyday oatmeal and let me know what you think.

Yields: 1

Ingredients:
½ cup old fashioned oats
1 cup water
1/8 cup pumpkin
1 tsp pumpkin pie spice
1 tbs brown sugar
1 packet Splenda sugar substitute

Instructions:
1. In a bowl, combine all ingredients
2. Add some chopped nuts, if desired
3. Microwave oatmeal for 2-3 minutes

Be sure to keep an eye on the oatmeal so that it doesn’t boil over in the microwave!
