Pumpkins are an amazing vegetable – seeds from the early ancestors of pumpkins have been found in Mexico dating back to 7,000 to 5,500 B.C.!  Of course, my favorite trait of pumpkins is their flavor.  While I love pumpkin pie, I hate all of the calories and fat you find in just one single slice!

This recipe is great served as a dip with graham crackers. I always make sure I have some on hand for my annual Halloween get-together! It’s a great way to enjoy the taste of pumpkin pie in small doses. With only 77 calories per serving, you can enjoy guiltlessly!

Try it out at your next gathering and let me know how it goes over!

Yields: 28 servings

Ingredients:
1 (8 ounce) container Cool Whip, thawed
1 (5 ounce) package vanilla instant pudding mix
1 (8 ounce) cream cheese, softened
1 (15 ounce) can pumpkin puree
1 teaspoon pumpkin pie spice

1. In a large bowl, mix together vanilla pudding mix, cream cheese, pumpkin and pumpkin pie spice.
2. Fold in the thawed Cool Whip
3. Chill in the refrigerator until serving
4. Serve with gingersnaps, vanilla wafers or cinnamon graham crackers

Can I substitute light cream cheese?

Hi John!

I've actually tried making this dip both ways - once with light cream cheese and once with regular.

The light version turned out great, if not just a little creamier than the original, so go ahead and substitute!
