With the holidays getting ever closer, I’m always on the look-out for healthy dishes to take to the many upcoming family events. As a matter of fact, I plan on taking this relish to a holiday party this weekend!

The great thing about this recipe is that it is super easy to make and goes great with any main dish.  You can’t go wrong!  Give it a try and let me know what you think!

Serves 5.

Ingredients:

2 cups cranberries (1/2 lb)
1/2 cup granulated sweetener (2 tbs. liquid)
1 cup crushed pineapple, drained

Instructions:

1. Wash cranberries, removing stems and soft berries.
2. Grind raw cranberries, add pineapple and sweetener.

Calories: 55
Fat: .4 g
Sodium: 4.8 mg
Protein: .14 g
Fiber: 5.35g
 

This relish is tart, a good accompaniment to turkey or any other meat. It will keep well in the fridge for use with many meals. Remainder of package may be frozen in plastic bag.

We tried this for a Thanksgiving dinner with family. It went over great! People who never liked cranberries before liked this.
