Sometimes I think the phrase ‘busy as a bee’ was made for me. Now, granted, my crammed schedule is a self-inflicted matter. In fact, I really like to keep myself busy! But my active schedule sometimes that leaves me a little squeezed for time. And as everyone knows, mornings can be the worst. It seems like I’m running out the door all too often without the most important thing of all – breakfast!
Breakfast is a really important meal, and I have always made a concerted effort to make time for it. But even I seem to run out of time in the morning. To help make getting a nutritious breakfast easier, I decided I needed an on-the-go option. So today, I wanted to share my solution for a quick breakfast: Health Nut Muffins!
These muffins provide you with fiber and protein, both of which will help stave off those mid-morning hunger pangs! These are great to make and toss into the freezer. Just pull one or two out at night, and you’ve got breakfast waiting for you the next morning. Give them a try and let me know what you think!
Yields: 24
Ingredients:
3 bananas, mashed
2 eggs
2 tablespoons oil
2 cups buttermilk
1 tablespoon vanilla
2 apples, peeled, cored and finely chopped
¾ cup dates, chopped
¾ cup walnuts, chopped
1 cup blueberries
2 teaspoons cinnamon
1 ½ cups flour
1 ¾ cups whole wheat flour
1 cup brown sugar
½ cup quick oats
½ cup oat bran
½ cup wheat germ
2 teaspoons baking soda
2 teaspoons baking powder
½ salt
Instructions:
1. Whisk eggs and buttermilk.
2. Add remaining wet ingredients and mix.
3. In a separate bowl, mix together dry ingredients.
4. Add to wet ingredients, mixing until just combined.
5. Pour mixture into muffin tins and bake at 350 for 15-25 minutes.
