When the weather starts to get warm, one of my favorite treats is ice cream. However, it’s not the best idea to have a big ice cream cone every day – the extra fat and calories would start to add up pretty quickly!

I was pretty excited to come across this recipe, though. Not only does this help curb my ice cream craving, it controls portion size at the same time.  The best thing is that you get to use your favorite yogurt flavor, so the possibilities are almost endless! 

I think I’m going to try using key lime yogurt and chop up some strawberries to mix in. What flavor combinations can you come up with?  Leave me a comment if you’ve got a favorite!


Yields: 24

Ingredients:
2 lb. container of your favorite yogurt (any flavor)
1 container of Cool Whip
1 package of Nilla Wafers
Cupcake liners

Instructions:
1. In a large bowl, mix the yogurt and Cool Whip.
2. Place the cupcake liners into a muffin tin and place a Nilla Wafer, flat side down, in each slot.
3. Fill each liner about half full with mixture.
4. Freeze until firm, then serve.

Protein: 1 g
