It’s hard to believe that September has almost come and gone! As the weather starts to cool, I like to start pulling out some of my favorite fall recipes. There are some great foods available this time of year, and today’s recipe combines two of my fall favorites: apples and squash!

This recipe is low in fat and is a great source of fiber and potassium. In fact, one serving provides you with about 33% of your daily fiber and potassium needs! And it doesn’t hurt that it tastes great and goes with almost anything. I personally love to serve this side dish with baked pork chops.

Yields: 4

Ingredients:
1 butternut squash, peeled, seeded and cut into chunks
3 medium apples, cored, peeled and sliced
1 tablespoon lemon juice
¾ teaspoon ground cinnamon
1 tablespoon brown sugar
½ cup apple juice

Instructions:
1. Preheat oven to 350 degrees
2. Coat the inside of a 1-quart casserole dish with cooking spray
3. Combine squash and apples with lemon juice and cinnamon in a large bowl. Toss to coat well.
4. Place in casserole and sprinkle with brown sugar. Pour apple juice over the mixture.
5. Cover casserole with lid or foil and bake 1 hour, or until squash is tender.
